1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

1/4 tsp nutmeg

½ cup unsalted butter, softened

¾ cup brown sugar, packed

1 large egg

1 tsp vanilla extract

½ cup buttermilk

1 ½ cups peeled, chopped apples (about 2 medium apples)

1/4 cup granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with non-stick spray.

    Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Set aside.

      Cream Butter and Sugar: In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.

        Incorporate Wet Ingredients: Add the egg and vanilla extract to the butter mixture, mixing until well combined.

          Combine Mixtures: Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Gently fold in the chopped apples using a spatula until just combined. Be careful not to overmix; a few lumps are fine.

            Prepare Topping: In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
