1 lb (450g) boneless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 carrot, julienned

1/2 cup snap peas

3 cloves garlic, minced

1 teaspoon grated fresh ginger

1/4 cup teriyaki sauce

1 tablespoon soy sauce

1 tablespoon sesame oil

2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Prep the Chicken: In a bowl, marinate the sliced chicken in 2 tablespoons of teriyaki sauce for at least 20 minutes. This allows the flavors to penetrate the meat.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside.

      Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry the vegetables for 3-4 minutes until they are just tender but still crisp.

        Combine: Return the chicken to the pan. Add the remaining teriyaki sauce, soy sauce, and sesame oil. Stir everything together to coat the chicken and vegetables in the sauce.

          Thicken the Sauce: Pour in the cornstarch slurry and stir for another minute until the sauce thickens.
