10 oz (280g) fresh baby spinach, thoroughly washed

2 tablespoons sesame oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1 clove garlic, finely minced

½ teaspoon grated fresh ginger

1 tablespoon toasted sesame seeds

2 green onions, finely chopped

¼ teaspoon red pepper flakes (adjust to taste)

Salt, to taste

Instructions
 

Blanch the Spinach: Bring a pot of water to a boil. Add the fresh baby spinach and blanch for 30 seconds until wilted but still vibrant green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain well and gently squeeze out excess water.

    Prepare the Dressing: In a medium bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, minced garlic, grated ginger, and red pepper flakes. Taste and adjust seasoning with salt if needed.

      Mix the Salad: In a large mixing bowl, combine the blanched spinach with the dressing. Toss gently to ensure the spinach is evenly coated.

        Add Final Touches: Sprinkle the toasted sesame seeds and chopped green onions over the spinach salad. Toss lightly again to distribute.
