Flavorful Jailhouse Rice

2 cups long-grain white rice

4 cups chicken broth (or vegetable broth for a vegetarian option)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn

1 large onion, diced

3 cloves garlic, minced

1 medium red bell pepper, diced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro, for garnish

Lime wedges, for serving (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté until the onion becomes translucent, about 5-7 minutes.

    Add the minced garlic, cumin, paprika, and chili powder to the pot. Stir for about 1 minute until fragrant.

      Pour in the chicken broth and bring to a boil. Once it reaches a boil, stir in the rice and add salt and pepper to taste.

        Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice has absorbed the liquid and is cooked through.

          Once cooked, fluff the rice with a fork and gently mix in the black beans and corn. Allow it to heat through for another 5 minutes.

            Remove from heat and let it sit covered for 5 minutes. This allows the flavors to meld together.

              Serve hot, garnished with fresh cilantro and a squeeze of lime juice, if desired.
