2 cups all-purpose flour

1/2 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and cubed

6 to 8 tablespoons ice water

4 medium apples, peeled, cored, and sliced (about 4 cups)

3/4 cup brown sugar

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions
 

Prepare the Crust: In a large bowl, whisk together flour, salt, and sugar. Add the chilled, cubed butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Make the Apple Filling: In a separate mixing bowl, combine sliced apples, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Toss until the apples are well-coated and set aside to macerate for about 15 minutes.

      Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 9x13-inch baking dish with parchment paper, allowing some overhang for easy removal.

        Roll Out the Dough: On a lightly floured surface, roll out one of the chilled dough disks to fit the bottom of the prepared baking dish. Carefully transfer it to the dish and trim any excess dough hanging over the sides.

          Fill with Apples: Spread the apple filling evenly over the crust, making sure to distribute the apples well.

            Top Crust: Roll out the second dough disk and place it over the apple filling. Trim and crimp the edges together to seal. Cut several slits in the top crust to allow steam to escape.

              Egg Wash & Sugar: Brush the top crust with the beaten egg. Sprinkle the coarse sugar over the top for added sweetness and crunch.

                Bake: Bake in the preheated oven for 35-40 minutes or until the crust is golden brown and the filling is bubbly.

                  Cool and Serve: Allow the bars to cool in the pan for at least 30 minutes before lifting using the parchment paper overhang. Cut into squares or rectangles, serve warm or at room temperature, and enjoy!
