1 lb (450g) white fish fillets (cod or haddock), cut into bite-sized pieces

2 cups (500ml) fish stock or vegetable broth

1 large onion, diced

2 garlic cloves, minced

3 medium potatoes, peeled and diced

1 cup (240ml) heavy cream

1 cup (240ml) whole milk

1 cup (150g) frozen corn (or fresh sweet corn when in season)

1 cup (150g) carrots, diced

2 tablespoons olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Fresh parsley for garnish

Prep the Base: In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic, sautéing until softened and translucent (about 5 minutes).

    Add Vegetables: Stir in the diced potatoes and carrots, cooking for an additional 5 minutes. This allows the vegetables to absorb the flavors from the onion and garlic.

      Simmer it Down: Pour in the fish stock (or vegetable broth) and bring to a gentle boil. Reduce the heat to low and let it simmer for 15 minutes, or until the potatoes are tender but not mushy.
