Ingredients

2 pounds ripe figs, stems removed and quartered

1 cup granulated sugar

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 teaspoon sea salt

Instructions

Prep the Figs: Start by thoroughly washing the figs under cold water. Remove the stems, and then quarter each fig. Place them into a large mixing bowl.

Mix Ingredients: In the same bowl with the figs, add the granulated sugar, fresh lemon juice, vanilla extract, ground cinnamon, and sea salt. Stir gently to combine, ensuring that the figs are well coated with the sugar and flavorings.

Macerate: Let the fig mixture sit for about 1-2 hours at room temperature. This will allow the figs to release their juices and the sugar to dissolve, creating a natural syrup.

Cook the Jam: Transfer the fig mixture to a large saucepan over medium heat. Bring the mixture to a gentle boil while stirring occasionally.

Simmer: Once boiling, reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring frequently. You want the figs to break down and the mixture to thicken.

Check the Consistency: To test if the jam is ready, place a spoonful on a chilled plate and let it sit for a minute. Run your finger through the jam; it should hold its shape and not immediately run back together.

Jar the Jam: Once the desired consistency is reached, remove the saucepan from the heat. Allow the jam to cool for a few minutes before transferring it to sterilized jars. Seal the jars while the jam is still warm.

Cool and Store: Let the jars cool completely at room temperature before storing them in the refrigerator. The jam can be stored in the fridge for up to 3 weeks or canned for longer preservation.
