Ingredients

For the Fiery Chicken:

2 boneless, skinless chicken thighs

1 tablespoon vegetable oil

2 tablespoons chili garlic sauce (adjust for heat level)

1 tablespoon soy sauce

1 teaspoon sesame oil

Salt and pepper to taste

1 green onion, chopped (for garnish)

For the Ramen:

2 packages of instant ramen noodles (discard seasoning packets)

4 cups chicken broth

1 tablespoon miso paste

1 tablespoon soy sauce

1 tablespoon sriracha (or more, for extra heat)

1 cup sliced mushrooms (shiitake or button)

1 cup baby spinach

2 soft boiled eggs (for topping)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon sriracha (optional, for extra kick)

Salt and pepper to taste

Instructions

Prepare the Chicken:

    - In a medium bowl, combine the chicken thighs with chili garlic sauce, soy sauce, sesame oil, salt, and pepper. Let marinate for 15-20 minutes.

      Make the Creamy Garlic Sauce:

        - In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, sriracha, salt, and pepper. Adjust the flavor if necessary and set aside.

          Cook the Chicken:

            - Heat vegetable oil in a skillet over medium heat. Add the marinated chicken thighs and cook for about 6-7 minutes per side, or until cooked through and nicely browned. Remove from heat, let it rest, then slice into strips.

              Prepare the Broth:

                - In a large pot, bring chicken broth to a simmer over medium heat. Add miso paste, soy sauce, and sriracha, stirring until miso is dissolved. Add the mushrooms and let simmer for about 5 minutes.

                  Cook the Noodles:

                    - While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.

                      Combine Ingredients:

                        - Add baby spinach to the broth and simmer until wilted (about 1-2 minutes). Then, add cooked ramen noodles to the broth, stirring gently to combine.

                          Assemble the Ramen Bowls:

                            - In each bowl, serve a generous portion of the ramen noodle broth mixture. Top with sliced chicken, halved soft boiled eggs, and a drizzle of the creamy garlic sauce. Sprinkle with chopped green onions for garnish.

                              Serve:

                                - Enjoy your Fiery Chicken Ramen while hot, taking care to have extra napkins ready for the delicious mess!
