Ingredients

2 boneless, skinless chicken thighs

2 teaspoons soy sauce

1 teaspoon sesame oil

1 tablespoon gochujang (Korean chili paste)

4 cups chicken broth

2 packs of ramen noodles (discard seasoning packets)

1 tablespoon miso paste

2 cloves garlic, minced

1 tablespoon ginger, grated

2 green onions, chopped (white and green parts separated)

1 cup baby spinach

2 eggs

1 tablespoon vegetable oil

Salt and pepper, to taste

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons sour cream

3 cloves garlic, minced

1 teaspoon lemon juice

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a bowl, mix soy sauce, sesame oil, and gochujang. Add the chicken thighs, coating them well in the marinade. Set aside for at least 20 minutes to absorb flavors.

Prepare the Creamy Garlic Sauce: In a separate bowl, mix together the mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper until smooth. Set aside in the refrigerator for flavors to combine.

Cook the Chicken: Heat vegetable oil in a skillet over medium heat. Once hot, add the marinated chicken thighs and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove from skillet and let rest, then slice into strips.

Make the Ramen Broth: In a large pot, heat the chicken broth over medium heat. Add minced garlic, grated ginger, and miso paste, stirring to combine. Bring the broth to a gentle simmer.

Cook the Ramen Noodles: Once the broth is simmering, add the ramen noodles and cook according to package instructions (usually about 3-4 minutes).

Add Vegetables and Season: In the last minute of cooking the noodles, add the spinach and the white parts of the green onions. Season with salt and pepper to taste.

Prepare the Eggs: In a separate pot, bring water to a gentle boil. Carefully add the eggs and boil for 6-7 minutes for a soft-boiled texture. Remove the eggs and place them in an ice bath to stop cooking.

Assemble the Ramen Bowls: Divide the ramen and broth among bowls. Top each bowl with sliced chicken, halved soft-boiled eggs, and garnish with the green parts of the green onions, sesame seeds, and cilantro if desired.

Drizzle with Creamy Garlic Sauce: Before serving, generously drizzle the creamy garlic sauce over the ramen for an extra kick of flavor.

Enjoy Your Fiery Chicken Ramen: Serve immediately while hot, and savor the delightful blend of spicy, creamy, and comforting flavors.
