Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust for spice level)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

1 teaspoon lemon zest

1/4 cup fresh parsley, chopped

Salt and pepper to taste

8 ounces linguine or spaghetti

Grated Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Prepare the Shrimp: In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant but not browned.

Sauté the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side until shrimp are pink and opaque.

Make the Sauce: Pour in the white wine, lemon juice, and lemon zest. Raise the heat slightly and let the mixture simmer for 2-3 minutes until the sauce reduces by half.

Combine Pasta and Sauce: Add the drained pasta to the skillet with the shrimp and sauce. Toss well to combine, adding a splash of the reserved pasta water if needed to loosen the sauce.

Finish with Herbs: Stir in the chopped parsley and adjust seasoning with more salt and pepper if desired.

Serve: Plate the shrimp scampi over a bed of pasta, topping with grated Parmesan cheese and extra parsley for garnish.
