Fall Crockpot Mac and Cheese with Broccoli

12 ounces elbow macaroni

4 cups broccoli florets (fresh or frozen)

4 cups sharp cheddar cheese, shredded

1 cup cream cheese, cubed

4 cups vegetable broth

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 tsp mustard powder (or 1 tbsp Dijon mustard)

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Salt to taste

1 cup panko breadcrumbs (optional for topping)

2 tablespoons melted butter (optional for mixing with breadcrumbs)

Instructions
 

Prepare the Crockpot: Grease the interior of the crockpot with cooking spray or a little bit of olive oil to prevent sticking.

    Combine Ingredients: In the crockpot, combine the dry elbow macaroni, broccoli florets, shredded cheddar cheese, cubed cream cheese, vegetable broth, whole milk, garlic powder, onion powder, mustard powder, black pepper, smoked paprika, and salt. Stir everything well to ensure the macaroni and broccoli are well coated with the liquid and cheese.

      Cook: Cover the crockpot with the lid and set it to cook on low for about 2 to 2.5 hours, or until the pasta is tender and the cheese has melted, stirring halfway through if possible.

        Texture Check: After 2 hours, check the consistency. If the mixture looks too dry, add a splash of extra milk (about 1/4 cup) to reach your desired creaminess.

          Optional Topping: If you desire a crispy topping, mix the panko breadcrumbs with the melted butter in a small bowl. About 15 minutes before serving, sprinkle the breadcrumb mixture over the mac and cheese and close the lid. Cook on high for the last 15 minutes, allowing the breadcrumbs to crisp up.
