Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/2 cup fresh basil leaves, chopped

2 cloves garlic, minced

1 teaspoon olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Toothpicks or kitchen twine for securing

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Prepare the Filling: In a medium skillet, heat one teaspoon of olive oil over medium heat. Add minced garlic, chopped spinach, and halved cherry tomatoes. Sauté for about 2-3 minutes until the spinach has wilted and the tomatoes are slightly softened. Remove from heat and let cool for a few minutes.

Mix Ingredients: In a mixing bowl, combine the sautéed mixture with mozzarella cheese and chopped basil. Season with salt, pepper, and Italian seasoning if using. Mix well until all ingredients are combined.

Prepare the Chicken Breasts: Using a sharp knife, gently cut a pocket into each chicken breast. Be careful not to cut all the way through.

Stuff the Chicken: Generously spoon the tomato and basil filling into the pockets of each chicken breast. Use toothpicks or kitchen twine to secure the opening if necessary.

Season the Chicken: Place the stuffed chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil and season the tops with salt and pepper.

Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and an internal temperature of 165°F (75°C) is reached.

Serve: Once done, remove from the oven and let it rest for 5 minutes. Slice the chicken if desired and garnish with additional basil. Serve warm with your favorite side dish.
