Easy Spinach Feta Baked Omelets

6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (whole or skim)

1/4 cup diced onions

1/4 cup red bell pepper, diced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a medium skillet over medium heat, add the olive oil. Once hot, add the diced onions and red bell pepper. Sauté for about 3-4 minutes until they start to soften. Add the chopped spinach and cook for an additional 2 minutes, until wilted. Remove from heat and let it cool slightly.

      Prepare Egg Mixture: In a large mixing bowl, crack the eggs and whisk in the milk. Season with salt and pepper to taste.

        Combine Ingredients: Stir in the sautéed vegetables and crumbled feta cheese into the egg mixture. Make sure everything is well combined.

          Grease Muffin Tin: Lightly grease a muffin tin with cooking spray or olive oil to prevent sticking.

            Pour Mixture: Carefully pour the egg and vegetable mixture into the greased muffin tin, filling each cup about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and a toothpick inserted comes out clean.

                Cool and Serve: Remove the omelets from the oven and let them cool for a couple of minutes. Use a butter knife around the edges to gently lift them out of the muffin tin.

                  Garnish and Enjoy: Sprinkle fresh parsley on top for garnish, and serve warm or at room temperature.
