1.5 lbs baby potatoes (Yukon Gold or red)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)

1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Potatoes: Wash the baby potatoes thoroughly and cut them in half (or quarter them if they’re large) to ensure even cooking.

    Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Allow it to warm up for about 1-2 minutes.

      Cook the Potatoes: Add the halved potatoes to the skillet, cut side down. Avoid overcrowding the pan; if necessary, work in batches. Let them cook without stirring for about 5-7 minutes until they are golden and crispy on the bottom.

        Add the Garlic and Herbs: Once the potatoes have a nice golden color, flip them to the other side. Add the minced garlic, rosemary, thyme, paprika, salt, and pepper to the skillet. Stir everything together so the spices are evenly distributed over the potatoes.

          Continue Cooking: Cook for another 10-15 minutes, stirring occasionally, until the potatoes are tender and cooked through. You can cover the skillet for the last few minutes to help them cook faster.

            Finishing Touches: Once done, remove from heat. Taste and adjust seasoning with more salt and pepper if needed. Garnish with freshly chopped parsley.

              Serve: Serve the skillet potatoes hot, with lemon wedges on the side to squeeze over them for an extra burst of flavor.
