Easy Shrimp Scampi Linguine

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup dry white wine (like Sauvignon Blanc)

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of the butter. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.

      Add Shrimp: Increase the heat slightly, add the shrimp to the pan, and season with salt and pepper. Cook for 2-3 minutes on one side, until they turn pink. Flip the shrimp and cook for another 2-3 minutes until fully cooked. Remove shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, pour in the dry white wine, lemon juice, and lemon zest. Allow the mixture to simmer for about 2-3 minutes, letting it reduce slightly.

          Combine Ingredients: Return the cooked shrimp to the skillet along with the remaining butter. Toss in the drained linguine and combine everything well. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Finish and Serve: Remove the skillet from heat, stir in the chopped parsley, and taste for seasoning adjustments. Serve immediately with grated Parmesan cheese on top, if desired.
