Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Prepare Wet Ingredients: In a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined; a few lumps are okay. Be careful not to overmix, as this can make the pancakes tough.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter.

Cook the Pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles appear on the surface and the edges look set. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.

Serve: Keep cooked pancakes warm in a low oven (200°F / 93°C) while you repeat with the remaining batter. Serve warm with your favorite toppings like maple syrup, fresh berries, or a dusting of powdered sugar.
