1 pound breakfast sausage, crumbled

10 pancakes (store-bought or homemade)

6 large eggs

1 cup milk

1 teaspoon vanilla extract

1/4 cup maple syrup (plus extra for serving)

1 teaspoon baking powder

1/2 teaspoon salt

1 cup shredded cheddar cheese

Fresh fruit (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

    Cook the Sausage: In a skillet over medium heat, cook the crumbled sausage until browned and cooked through. Drain any excess fat and set aside.

      Prepare Pancakes: If using homemade pancakes, make and cool them first. Cut the pancakes into quarters. If using store-bought, prepare them as per package instructions.

        Mix the Liquid Ingredients: In a large bowl, whisk together the eggs, milk, vanilla extract, maple syrup, baking powder, and salt until well combined.
