1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk (or plain yogurt)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs (Panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon dried oregano

2 tablespoons olive oil

Cooking spray or additional olive oil for greasing

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Marinate the Chicken: In a bowl, combine the chicken pieces and buttermilk. Add the garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes (or up to overnight for deeper flavor).

      Prepare the Coating: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, and dried oregano. Mix until well blended.

        Coat the Chicken: Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the breadcrumb mixture, pressing gently to ensure the coating adheres well. Place the coated chicken bites on the prepared baking sheet in a single layer.

          Drizzle with Olive Oil: Once all chicken bites are coated, drizzle olive oil over the top to help them crisp up in the oven.

            Bake: Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the coating is golden brown and crispy. An internal temperature of 165°F (75°C) ensures they are safe to eat.
