4 boneless, skinless chicken thighs (about 1.5 lbs)

2 tablespoons olive oil

4 cloves garlic, minced

1 large lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 cup low-sodium chicken broth

2 cups baby spinach

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation: Start by patting the chicken thighs dry with a paper towel. This helps achieve a nice sear. Season both sides with salt, pepper, onion powder, and paprika.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs and sear for about 5-6 minutes on each side or until golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, making sure not to burn it.

        Prepare the Sauce: Add the lemon juice, lemon zest, chicken broth, oregano, and thyme to the skillet. Stir to combine, scraping up any browned bits from the bottom of the pan.

          Combine Chicken and Veggies: Return the chicken thighs to the skillet. Add the cherry tomatoes and baby spinach, nestling the chicken among the veggies. Bring the mixture to a simmer.

            Cook Through: Cover the skillet and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the spinach is wilted.
