Easy Mexican Lasagna

12 corn tortillas

2 cups cooked shredded chicken (or ground beef, if preferred)

2 cups refried beans (canned is fine)

2 cups salsa (your choice of spice level)

2 cups shredded Mexican blend cheese

1 cup corn (frozen or fresh)

1 can (4 oz) diced green chiles

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Fresh cilantro leaves (for garnish)

Sour cream (for serving, optional)

Sliced jalapeños (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large mixing bowl, combine shredded chicken with cumin, chili powder, garlic powder, onion powder, corn, and diced green chiles. Mix well to incorporate all the spices and flavors.

      Layer the Lasagna: In a 9x13-inch baking dish, spread a thin layer of salsa on the bottom. Place 4 tortillas over the salsa, overlapping slightly to cover the bottom.

        Add the First Layer: Spread half of the refried beans over the tortillas, followed by half of the chicken mixture, and then 1 cup of shredded cheese.

          Repeat Layers: Add another layer of tortillas, then the remaining refried beans, the rest of the chicken mixture, and another cup of cheese. Top with a final layer of tortillas and the remaining salsa, ensuring the top is well covered.

            Finish with Cheese: Sprinkle the remaining cheese over the top layer of salsa. Cover the baking dish with aluminum foil.

              Bake: Bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Let it Rest: Remove from the oven and allow the lasagna to sit for about 10 minutes. This helps it set and makes it easier to cut.

                  Serve: Garnish with fresh cilantro leaves and serve with sour cream and sliced jalapeños on the side, if desired.
