10 oz fresh spinach

2 tablespoons sesame oil

1 tablespoon soy sauce

1 teaspoon rice vinegar

1 teaspoon sugar

1 garlic clove, minced

1 tablespoon sesame seeds, toasted

2 green onions, finely chopped

1 teaspoon gochugaru (Korean red pepper flakes, optional for spice)

Salt, to taste

Pepper, to taste

Instructions
 

Prepare the Spinach: Start by washing the spinach thoroughly under cold water. Remove any tough stems and pat it dry with a kitchen towel or spin it in a salad spinner.

    Make the Dressing: In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, minced garlic, and gochugaru (if using). Mix until the sugar dissolves and the ingredients are well combined.

      Combine Ingredients: In a large mixing bowl, add the fresh spinach. Pour the dressing over the spinach, ensuring it’s evenly coated. Gently toss the spinach with your hands or salad tongs to avoid bruising the leaves.
