Ingredients
  

1 lb (450g) ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 (14.5 oz) can diced tomatoes

1 (6 oz) can tomato paste

1 cup beef broth

2 cups elbow macaroni

2 teaspoons paprika (preferably smoked)

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley or basil for garnish

Instructions
 

In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add the chopped onion, garlic, and bell pepper to the pot. Sauté for 3-4 minutes, or until the veggies soften.

      Stir in the diced tomatoes, tomato paste, beef broth, paprika, oregano, salt, and pepper. Bring the mixture to a gentle simmer.

        Once simmering, add the elbow macaroni to the pot. Stir to combine and make sure the macaroni is submerged in the liquid.

          Cover the pot and cook for 12-15 minutes, or until the macaroni is tender and has absorbed most of the broth. Stir occasionally to prevent sticking.

            If desired, stir in shredded cheddar cheese until melted and creamy.

              Remove from heat and garnish with freshly chopped parsley or basil before serving.
