12 oz spaghetti or fettuccine pasta

2 tbsp olive oil

1 medium onion, diced

2 garlic cloves, minced

8 oz mushrooms, sliced

2 cups cooked chicken, shredded or diced

1 cup frozen peas

1/2 cup cherry tomatoes, halved

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the spaghetti or fettuccine according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, warm olive oil. Add the diced onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).

      Add Mushrooms: Stir in the sliced mushrooms and sauté until they are golden brown and tender, about 5-6 minutes.

        Combine Ingredients: In the skillet, add the cooked chicken, frozen peas, cherry tomatoes, chicken broth, heavy cream, Parmesan cheese, dried thyme, dried oregano, salt, and pepper. Stir well to combine and allow to simmer for 5 minutes.

          Mix Pasta and Sauce: Add the cooked pasta to the skillet and gently toss everything together until the pasta is evenly coated with the creamy sauce.

            Transfer to Baking Dish: Preheat the oven to 375°F (190°C). Transfer the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the shredded mozzarella cheese on top.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
