Easy Chicken Fajita Quesadillas

2 boneless, skinless chicken breasts, sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

4 large flour tortillas

2 cups shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the sliced chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Drizzle with olive oil and give it a good toss until well-coated. Let it marinate for about 15 minutes.

    Cook the Vegetables: In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the sliced onions and bell peppers until they are softened and slightly caramelized, about 5-7 minutes. Remove the vegetables from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the marinated chicken. Cook for about 6-8 minutes or until the chicken is cooked through and no longer pink. Add the sautéed vegetables back to the skillet, mixing them with the chicken for 2 minutes. Remove from heat.

        Assemble the Quesadillas: Place a tortilla in the skillet over medium heat. On one half of the tortilla, layer a generous amount of the chicken and veggie mixture, followed by a good handful of shredded cheddar cheese. Fold the other half of the tortilla over the filling.

          Grill the Quesadilla: Cook the quesadilla for about 3-4 minutes on one side until it is golden and crispy, then flip and cook for an additional 2-3 minutes on the other side. Repeat for the remaining tortillas.
