Easy Breakfast Quesadillas

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large eggs

1/2 cup cooked and crumbled breakfast sausage (optional)

1/2 cup diced bell peppers (mixed colors for a vibrant look)

1/4 cup green onions, thinly sliced

Salt and pepper, to taste

1 tablespoon olive oil or cooking spray for the skillet

Salsa or hot sauce, for serving (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prepare Ingredients: In a bowl, whisk together the eggs, and season with salt and pepper. If you’re using sausage, make sure it's cooked and crumbled or sliced. Dice the bell peppers and slice the green onions.

    Cook Eggs: Heat a non-stick skillet over medium heat and add a little olive oil or cooking spray. Pour in the beaten eggs and scramble until just set. If adding, stir in the cooked sausage, bell peppers, and green onions. Cook together for an additional 2 minutes, until the peppers soften slightly. Remove from heat.

      Assemble Quesadillas: Lay out two tortillas on a clean surface. Evenly distribute half of the egg mixture over each tortilla. Sprinkle the shredded cheddar and mozzarella cheeses generously over the egg mixture. Top with the remaining tortillas to form two quesadillas.

        Cook Quesadillas: In the same skillet, over medium heat, cook the quesadillas one at a time. Add a little more oil if necessary. Cook for about 3-4 minutes on one side until golden and crispy, then carefully flip and cook for another 3-4 minutes until the cheese has melted and the other side is golden.

          Slice and Serve: Remove quesadillas from the skillet and let them cool for a minute before cutting into wedges. Serve warm with salsa or hot sauce on the side, and top with a dollop of sour cream or Greek yogurt if desired.
