Easy Black Pepper Chicken Recipe

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

3 cloves garlic, minced

1 inch fresh ginger, grated

1 bell pepper, sliced (any color)

1 onion, sliced

2 green onions, chopped

Salt to taste

Cooked white rice, for serving

Instructions
 

In a bowl, mix the chicken pieces with black pepper, soy sauce, oyster sauce, and cornstarch. Let it marinate for at least 20 minutes.

    Heat 2 tablespoons of the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

      In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.

        Add the sliced onion and bell pepper to the skillet. Stir-fry for 3-4 minutes until vegetables are tender, but still crisp.

          Return the cooked chicken to the skillet and toss everything together, cooking for an additional 2-3 minutes. Adjust the seasoning with salt, if needed.

            Remove from heat, garnish with chopped green onions, and serve hot over cooked white rice.
