1 teaspoon salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1-2 cloves garlic, minced

1 teaspoon grated ginger (optional)

1 tablespoon sesame seeds

2 green onions, chopped

Fresh cilantro, for garnish (optional)

Red pepper flakes or sliced chili (optional, for spice)

Prepare the Cucumbers: Start by washing the cucumbers. Slice them thinly using a sharp knife or mandoline for even pieces. Place them in a bowl and sprinkle with salt. Mix well and let them sit for about 10 minutes. This step helps to draw out excess moisture, making the salad crisp.
