2 large English cucumbers, thinly sliced

1 tablespoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar (or honey)

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon chili flakes (adjust for spice preference)

2 green onions, finely chopped

2 tablespoons sesame seeds (toasted if desired)

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare the Cucumbers: In a large bowl, toss the thinly sliced cucumbers with salt. Let them sit for about 10-15 minutes to draw out excess moisture. Afterward, rinse them under cold water and drain well.

    Make the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), minced garlic, grated ginger, and chili flakes until well combined.

      Combine: In a large mixing bowl, add the drained cucumbers. Pour the dressing over the cucumbers, and gently toss to combine, ensuring all cucumber slices are coated.

        Add Garnishes: Mix in the chopped green onions and sesame seeds. Toss again lightly to distribute.

          Serve: Transfer the salad to a serving dish. Garnish with fresh cilantro leaves if desired. Enjoy immediately or refrigerate for 30 minutes for a chilled version.
