Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup cooked quinoa

1/2 cup breadcrumbs (or gluten-free alternative)

1/2 cup corn kernels (frozen or fresh)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tbsp soy sauce (or tamari for gluten-free)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (optional, for extra kick)

Salt and pepper to taste

2 tbsp olive oil (for grilling)

Burger buns

Your choice of toppings (lettuce, tomato, avocado, cheese, etc.)

Instructions

Mash the Beans: In a large mixing bowl, use a fork or potato masher to mash the black beans until mostly smooth, leaving some chunks for texture.

Combine Ingredients: Add the cooked quinoa, breadcrumbs, corn, chopped red onion, minced garlic, soy sauce, cumin, smoked paprika, chili powder (if using), and a pinch of salt and pepper to the mashed black beans. Mix well until the ingredients are fully combined.

Form Patties: Divide the mixture into about 4-6 equal portions, depending on your desired burger size. Shape each portion into patties, about 1/2 inch thick. Place the patties on a parchment-lined plate or tray.

Preheat the Grill: Preheat your grill (or grill pan) to medium heat. Lightly grease the grill grates with a bit of olive oil using a paper towel.

Grill the Burgers: Carefully place the patties on the grill. Grill for about 5-7 minutes on each side, or until they are heated through and have nice grill marks. If using a grill pan, you may need to adjust the cooking time for even grilling.

Assemble: Remove the veggie burgers from the grill and place each patty on a burger bun. Top with your favorite accompaniments like lettuce, tomato slices, avocado, cheese, or any other desired toppings.

Serve: Enjoy your delicious Easiest-Ever Grilled Veggie Burgers with your favorite side, like sweet potato fries or a crisp salad!
