2 large eggs

1 tsp vanilla extract

¾ cup buttermilk

1 cup mashed ripe bananas (about 2-3 bananas)

½ cup semi-sweet chocolate chips

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

½ cup unsweetened cocoa powder

½ cup heavy cream

1 tsp vanilla extract

A pinch of salt

For Decoration:

Chocolate shavings or banana slices for garnish (optional)

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-5 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

Combine Ingredients: Gradually mix in the dry ingredients to the butter mixture alternately with the buttermilk, starting and ending with the dry ingredients. Mix until just combined. Do not overmix!

Incorporate Bananas and Chocolate: Gently fold in the mashed bananas and semi-sweet chocolate chips with a spatula until evenly distributed in the batter.

Pour and Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare the Frosting: In a large mixing bowl, combine the softened butter, powdered sugar, cocoa powder, heavy cream, vanilla extract, and salt. Beat on low speed until combined, then increase to medium speed and whip until the frosting is light and fluffy, about 4-5 minutes.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of frosting on top, then place the second cake layer on top of the frosting. Use the remaining frosting to cover the sides and top of the cake.

Garnish and Serve: If desired, decorate the top of the cake with chocolate shavings or banana slices. Slice and serve your delicious Double Chocolate Banana Layer Cake!
