Ingredients

6 large eggs

1/4 cup milk

1/2 cup diced ham

1/2 cup diced red bell pepper

1/4 cup diced green bell pepper

1/4 cup diced onion

1/2 cup shredded cheddar cheese

1 tablespoon butter

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions

Beat the Eggs: In a large bowl, whisk together the eggs and milk until the mixture is smooth. Season with salt and pepper according to preference.

Sauté the Veggies: In a large skillet, melt the butter over medium heat. Add the diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes, or until the vegetables are soft and fragrant.

Add the Ham: Stir in the diced ham and cook for an additional 2-3 minutes until the ham is heated through.

Pour in the Eggs: Reduce the heat to medium-low, then pour the egg mixture over the sautéed vegetables and ham in the skillet. Let it cook undisturbed for 1-2 minutes until the edges just start to set.

Scramble: Gently stir the mixture with a spatula, allowing the uncooked eggs to flow to the bottom of the skillet. Continue to cook and stir until eggs are fully cooked but still soft, about 3-4 minutes.

Add Cheese: Sprinkle the shredded cheddar cheese over the top of the scramble just before removing it from the heat. Stir slightly to incorporate, allowing the cheese to melt.

Garnish and Serve: Remove from heat and garnish with chopped fresh parsley if desired. Serve hot with toast or alongside your favorite breakfast sides.
