1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained (or 1 cup frozen corn)

1 can (14.5 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade seasoning)

1 medium onion, diced

2 cloves garlic, minced

4 cups low-sodium chicken broth

1 bell pepper (any color), diced

1 tsp cumin powder

1 tsp smoked paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, avocado, cilantro, and lime wedges

Instructions
 

Begin by placing the boneless chicken breasts at the bottom of the slow cooker.

    Add the drained black beans, corn, and diced tomatoes on top of the chicken.

      Sprinkle the taco seasoning evenly over the mixture. Follow this with the diced onion, garlic, bell pepper, cumin, and smoked paprika.

        Pour the chicken broth over all the ingredients, ensuring everything is covered.

          Place the lid on the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.

            Once cooking is complete, remove the chicken breasts, shred them with two forks, and return the shredded chicken back into the soup. Stir well to combine.

              Taste and adjust seasoning with salt and pepper if necessary.

                Serve hot, garnished with your chosen toppings – the combination of shredded cheese, creamy sour cream, fresh avocado, fragrant cilantro, and a squeeze of lime will elevate the flavors perfectly!
