Ingredients

For the Cake:

1 cup unsalted butter (2 sticks)

1 cup unsweetened cocoa powder

4 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup buttermilk

For the Topping:

1 cup mini marshmallows

1/4 cup chopped pecans (optional)

1 cup semisweet chocolate chips

1/2 cup heavy cream

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Prepare the Cake Batter: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the cocoa powder until smooth and combined. Remove from heat and let it cool slightly.

Combine Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, and salt. Set aside.

Mix the Wet Ingredients: In a separate bowl, beat the eggs and add the granulated sugar, vanilla extract, and the cooled cocoa mixture. Stir until fully combined.

Combine Everything: Gradually add the dry mixture to the cocoa mixture, alternating with buttermilk, and stir just until combined. Be careful not to overmix.

Bake the Cake: Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Add the Topping: While the cake is still warm, sprinkle marshmallows and pecans (if using) over the top. Return to the oven for an additional 5 minutes or until the marshmallows are puffed.

Prepare the Chocolate Ganache: In a small saucepan over medium heat, bring the heavy cream to a simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.

Finish the Cake: Pour the chocolate ganache over the warm cake, spreading it evenly with a spatula. Allow the cake to cool completely before slicing.

Serve: Cut the cake into squares and enjoy the gooey, chocolatey Mississippi Mud Cake!
