Ingredients

1 cup unsalted butter, softened

1 cup cream cheese, softened

4 large eggs

1 teaspoon vanilla extract

1 teaspoon pecan extract (optional)

2 cups powdered sugar

1 cup all-purpose flour

1 cup chopped pecans, toasted

1 teaspoon baking powder

½ teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Prepare the Batter: In a large mixing bowl, beat the softened butter and cream cheese together using an electric mixer until creamy and smooth. This should take about 2-3 minutes.

Mix in Eggs and Extracts: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla and pecan extract (if using).

Combine Dry Ingredients: In a separate bowl, whisk together the powdered sugar, flour, baking powder, and salt.

Combine All Ingredients: Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Fold in the toasted chopped pecans.

Pour and Bake: Pour the batter into your prepared baking dish, smoothing it out with a spatula. Bake for 35-40 minutes until the top is lightly golden and a toothpick inserted in the center comes out with moist crumbs.

Cool and Serve: Allow the cake to cool in the pan for about 15-20 minutes before slicing. Serve warm or at room temperature, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
