1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

10 tablespoons unsalted butter, melted

Red Velvet Cheesecake Layer:

2 cups cream cheese, softened

1 cup granulated sugar

½ cup sour cream

2 large eggs

2 tablespoons red food coloring

1 tablespoon vanilla extract

1 tablespoon cocoa powder

Strawberry Swirl:

1 cup fresh strawberries, hulled and sliced

2 tablespoons sugar

1 tablespoon lemon juice

Whipped Topping:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Garnish:

Fresh strawberries

Chocolate shavings or drizzle (optional)

Instructions
 

Prepare the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, mix together the graham cracker crumbs, cocoa powder, sugar, and melted butter until combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

          Make the Strawberry Swirl:

            - In a small saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook for about 5-7 minutes until the strawberries soften and break down.

              - Mash the mixture slightly with a fork to create a chunky sauce. Remove from heat and set aside to cool.

                Prepare the Red Velvet Cheesecake Layer:

                  - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

                    - Gradually add in the granulated sugar and mix well.

                      - Add the sour cream, eggs one at a time, red food coloring, vanilla extract, and cocoa powder. Beat until completely combined and smooth.

                        Layer the Cheesecake:

                          - Pour half of the red velvet cheesecake batter over the cooled crust.
