2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup granulated sugar

1 cup packed light brown sugar

1 cup vegetable oil

4 large eggs

2 cups grated carrots (about 4 medium carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Combine Sugars and Oil: In another large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined.

        Add Eggs: Add the eggs one at a time, mixing well after each addition until the mixture is light and fluffy.

          Incorporate Carrots and Pineapple: Stir in the grated carrots and crushed pineapple until evenly distributed.

            Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredient mixture, stirring until just combined. Be careful not to overmix.

              Add Nuts and Raisins: If using, fold in the chopped walnuts or pecans and raisins gently.

                Pour into Pan: Pour the batter into the prepared baking pan, spreading it evenly.

                  Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                    Cool Completely: Remove from oven and allow the cake to cool in the pan on a wire rack for 15 minutes, then lift out using the parchment paper and transfer to the wire rack to cool completely.

                      Prepare Frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth. Gradually blend in the powdered sugar, then add the vanilla extract. Mix until creamy and smooth. If needed, add milk, one tablespoon at a time, to reach desired consistency.

                        Frost the Bars: Once the bars are completely cooled, spread the cream cheese frosting evenly over the top.
