Ingredients

1 cup Medjool dates, pitted and chopped

1/2 cup unsweetened cocoa powder

1/3 cup almond flour (or any nut flour of your choice)

1/4 cup coconut oil, melted

2 eggs (or flax eggs for a vegan option)

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp sea salt

1/2 cup walnuts or pecans, roughly chopped (optional)

1/4 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

Prepare the Dates: In a small bowl, soak the chopped Medjool dates in warm water for about 10 minutes if they are not soft. This will help them blend smoothly.

Blend the Dates: Drain the dates and place them in a food processor or blender. Add melted coconut oil, eggs (or flax eggs), and vanilla extract. Blend until you have a smooth paste.

Mix Dry Ingredients: In a large bowl, combine the almond flour, cocoa powder, baking powder, and sea salt, mixing well to combine.

Combine Wet and Dry Ingredients: Pour the date mixture into the bowl with the dry ingredients and mix until smooth. If desired, fold in walnuts or pecans and dark chocolate chips.

Bake the Brownies: Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and Slice: Remove the brownies from the oven and let them cool in the pan for about 10 minutes. Then transfer them to a wire rack to cool completely before slicing into squares.

Serve and Enjoy: Serve these brownies as a delectable dessert or a guilt-free snack! They can be enjoyed warm, or you can store them in an airtight container at room temperature for up to 5 days.
