8 oz (225g) high-quality dark chocolate (70% cacao or higher), chopped

½ cup (120ml) heavy cream

1 teaspoon vanilla extract

½ cup (about 70g) fresh raspberries, pureed (with seeds strained out for a smoother texture)

¼ cup (30g) unsweetened cocoa powder, for dusting

¼ cup (30g) finely chopped pistachios or almonds, for coating (optional)

A pinch of sea salt (optional)

Instructions
 

Prepare the Raspberry Puree: In a small pot, gently heat the fresh raspberries over medium-low heat until they break down, about 5 minutes. Use a fine-mesh strainer to strain out the seeds and collect the puree in a bowl. Set aside to cool slightly.

    Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate. In a small saucepan, heat the heavy cream over medium heat until just simmering (do not boil). Pour the hot cream over the chocolate and let it sit for about 2-3 minutes to melt.

      Combine Ingredients: After resting, add the vanilla extract, raspberry puree, and a pinch of sea salt (if using) to the melted chocolate and cream mixture. Stir gently until completely smooth and well combined. The mixture should be thick and glossy.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the mixture is firm enough to scoop.

          Shape the Truffles: Once the mixture is set, use a small cookie scoop or a tablespoon to portion out the truffle mixture. Use your hands to roll each portion into a round ball, about 1 inch in diameter.

            Coat the Truffles: Roll each truffle in cocoa powder to coat. For a different flavor and crunch, you can also roll some in the finely chopped pistachios or almonds.

              Refrigerate Again: Place the coated truffles on a baking sheet lined with parchment paper. Refrigerate for another 30 minutes to firm them up before serving.
