2 large cucumbers

1 cup Greek yogurt

2 tablespoons tahini

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

¼ cup finely chopped fresh dill

1 tablespoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

½ cup walnuts, toasted and chopped

2 tablespoons olive oil

Instructions
 

Prepare the Cucumbers: Slice the cucumbers into thin rounds or half-moons, depending on your preference. Lay the slices on a paper towel and sprinkle with a generous pinch of salt. Let them sit for about 15 minutes to draw out excess moisture. Pat dry with another paper towel.

    Make the Sauce: In a mixing bowl, combine Greek yogurt, tahini, minced garlic, lemon juice, smoked paprika, and cayenne pepper. Whisk together until smooth. Stir in fresh dill and honey/maple syrup. Season with salt and pepper to taste.

      Toast the Walnuts: In a dry skillet over medium heat, toast the walnuts for about 3-4 minutes, stirring frequently, until they are golden and fragrant. Remove from heat and chop roughly.

        Assemble: Drizzle olive oil over the cucumber slices and toss gently. Serve the cucumber slices on a platter and generously dollop the yogurt sauce on top. Sprinkle toasted walnuts over the dish for an added crunch.

          Garnish and Serve: Finish with a sprinkle of additional smoked paprika and a few fresh dill sprigs for garnish. Serve immediately as a refreshing appetizer or side dish!
