Ingredients
  

1 lb large shrimp, peeled and deveined

2 medium cucumbers, thinly sliced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

2 tbsp olive oil

2 tbsp lime juice

1 tsp honey

Salt and pepper, to taste

1/2 tsp garlic powder

1/4 tsp red pepper flakes (optional)

Instructions
 

Prepare the Shrimp: In a large pot of boiling salted water, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and place in a bowl of ice water to stop the cooking process. Once cooled, drain and pat dry.

    Mix the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, salt, pepper, garlic powder, and red pepper flakes until well combined. Adjust seasoning to taste.

      Combine Vegetables: In a large mixing bowl, combine the sliced cucumbers, cherry tomatoes, red onion, diced avocado, and chopped cilantro.

        Add the Shrimp: Fold the cooked shrimp into the vegetable mixture gently to avoid smashing the avocado.

          Dress the Salad: Pour the dressing over the salad and toss lightly to combine all ingredients evenly.

            Serve: Allow the salad to sit for about 10 minutes to let the flavors meld together before serving chilled.
