1 pound ground beef (or turkey)

1 packet taco seasoning

1 cup water

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced red onion

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 1 lime

Salt and pepper to taste

12 mini tortilla cups (store-bought or homemade)

Sour cream or Greek yogurt, for serving

Salsa, for drizzling

Instructions
 

Cook the Meat: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.

    Season: Add the taco seasoning and water to the skillet. Stir to combine and let simmer for about 5 minutes, or until the sauce thickens. Remove from heat.
