3 cups rolled oats

1 cup sliced almonds

1 cup chopped walnuts

1/2 cup honey

1/3 cup coconut oil (melted)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries (or your favorite dried fruit, optional)

1/2 cup dark chocolate chips (optional, for extra indulgence)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, sliced almonds, chopped walnuts, cinnamon, and salt. Stir together until well-mixed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey, and vanilla extract until smooth and fully combined.

        Combine Mixtures: Pour the wet ingredients over the dry ingredients. Stir well until all the dry items are thoroughly coated with the honey mixture.

          Spread on Baking Sheet: Transfer the mixture to the prepared baking sheet. Spread it out evenly, pressing it down slightly to ensure the granola forms clumps during baking.

            Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, stirring halfway through to ensure even baking. Keep an eye on it towards the end to prevent burning; it should be golden brown and fragrant.

              Cool & Add Extras: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. This is crucial for achieving the crunchy texture! After it cools, you can mix in the dried cranberries and chocolate chips, if using.

                Store: Once cooled, transfer the granola to an airtight container. It will stay fresh for up to two weeks—if you can resist eating it all beforehand!
