Activating yeast is a crucial step in bread-making, as it ensures that your dough rises properly and achieves that delightful airy texture. To activate the yeast, you’ll want to begin by dissolving it in warm water—typically around 110°F (43°C). This temperature is warm enough to wake the yeast without killing it. Add a pinch of sugar to the water to give the yeast something to feed on. Allow the mixture to sit for about 5 to 10 minutes.

Ingredients

2 cups all-purpose flour

1 teaspoon sugar

1 teaspoon salt

1 tablespoon instant yeast

¾ cup warm water (about 110°F)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional)

¼ cup grated Parmesan cheese

1 egg wash (1 egg beaten with 1 tablespoon water)

Fresh parsley, chopped (for garnish)

Instructions

Activate the Yeast: In a small bowl, mix warm water, sugar, and instant yeast. Let it sit for about 5-7 minutes until frothy.

Mix Dry Ingredients: In a large bowl, combine flour and salt. Make a well in the center.

Combine Wet and Dry: Once the yeast mixture is frothy, add it into the well along with olive oil. Mix until a shaggy dough forms.

Knead the Dough: Turn the dough onto a floured surface. Knead for about 5-7 minutes until smooth and elastic.

First Rise: Place the dough into a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Garlic Herb Mixture: In a small bowl, combine minced garlic, oregano, basil, crushed red pepper flakes (if using), and Parmesan cheese.

Shape the Breadsticks: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle about ½ inch thick. Cut the dough into strips (about 1 inch wide) using a pizza cutter or knife.

Coat with Garlic Herb Mixture: Brush each strip lightly with the egg wash, then sprinkle the garlic herb mixture generously on top.

Second Rise: Place the breadsticks onto a greased baking sheet, cover, and let them rise for another 20-30 minutes. Preheat the oven to 400°F (200°C) during this time.

Bake: After the second rise, bake the breadsticks in the preheated oven for 12-15 minutes, or until they are golden brown and crunchy.

Garnish and Serve: Remove from the oven, brush lightly with olive oil, and sprinkle with fresh parsley for garnish. Serve warm with marinara sauce or your favorite dip.
