Crockpot Spaghetti Chili Bake

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

2 cups beef broth

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

8 oz spaghetti, broken in half

1 cup shredded cheddar cheese

½ cup sour cream (for serving)

Fresh parsley or cilantro (for garnish)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat, then transfer the meat to your crockpot.

    Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes. Add to the crockpot.

      Combine Ingredients: In the crockpot, add the kidney beans, black beans, diced tomatoes, tomato sauce, beef broth, chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to combine.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld together.

          Add Spaghetti: About 20-30 minutes before serving, stir in the broken spaghetti into the chili mixture. Ensure the spaghetti is submerged in the sauce. Replace the lid and continue cooking on high until the spaghetti is tender, about 20-30 minutes.

            Serve: Once the spaghetti is cooked, scoop the chili bake into bowls. Top with shredded cheddar cheese and a dollop of sour cream. Garnish with fresh parsley or cilantro as desired.
