Crockpot Creamy Chicken Chili

1.5 lbs boneless, skinless chicken breasts

1 can (15 oz) white kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, undrained

1 can (4 oz) diced green chiles

1 medium onion, diced

2 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

1 cup chicken broth

1 cup heavy cream or coconut milk

2 tsp cumin

1 tsp chili powder

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (for serving)

Fresh cilantro, chopped (for garnish)

Tortilla chips or crusty bread (for serving)

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.

    Add Vegetables: Add the diced onion, minced garlic, corn, and drained white kidney beans on top of the chicken.

      Add Tomatoes and Spices: Pour in the canned diced tomatoes (with juice), green chiles, chicken broth, cumin, chili powder, smoked paprika, salt, and pepper.

        Mix and Cover: Gently stir to combine the ingredients, ensuring the chicken is somewhat submerged in the mixture, then cover the crockpot with the lid.

          Cook: Set the crockpot to low and cook for 6-8 hours, or on high for 4-5 hours, until the chicken is cooked through and tender.

            Shred the Chicken: Once cooked, remove the chicken from the crockpot, shred it using two forks, and return the shredded chicken back into the pot.

              Add Cream: Stir in the heavy cream or coconut milk, allowing it to mix well with the chili. Let it cook on low for an additional 15-30 minutes to warm through.

                Serve: Ladle the creamy chicken chili into bowls and top with shredded cheddar cheese, and fresh chopped cilantro. Serve with tortilla chips or crusty bread on the side.
