1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet chili seasoning mix

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, chopped

2 cloves garlic, minced

1 cup beef or vegetable broth

1 teaspoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cumin

    Combine the Ingredients: In your crockpot, layer the diced potatoes, cooked ground beef and onion mixture, kidney beans, diced tomatoes (with juices), and the chili seasoning mix. Stir to combine.
