2 medium zucchinis, cut into thin strips

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs, beaten

1/2 cup all-purpose flour

Cooking spray or olive oil for drizzling

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the zucchini by cutting them into thin strips, making sure they are uniform in size for even cooking.

      Set up the dredging station: In one bowl, place the all-purpose flour; in a second bowl, beat the eggs; and in a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

        Dredge the zucchini: First, coat each zucchini strip in flour, shaking off the excess. Next, dip it into the beaten eggs, and finally, roll it in the breadcrumb mixture until fully coated.

          Arrange on the baking sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they aren’t touching to allow for proper crispiness.

            Season and bake: Lightly spray or drizzle olive oil over the zucchini fries for added crispy texture. Bake in the preheated oven for about 20-25 minutes, flipping halfway through until golden brown and crispy.

              Serve immediately: Once baked, remove from the oven, let cool for a couple of minutes, and serve alongside your favorite dipping sauce, such as marinara or tzatziki.
