2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon cornstarch

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon sea salt

¼ teaspoon black pepper

Optional: A pinch of cayenne pepper for heat

Optional: Fresh herbs (like rosemary or thyme) for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Sweet Potatoes: Peel the sweet potatoes and cut them into even-sized fries, about 1/4 inch thick for optimal crispiness. Try to keep them uniform for even cooking.

      Soak the Fries (Optional): To enhance crispiness, soak the cut fries in cold water for at least 30 minutes. Drain and dry them thoroughly with a clean kitchen towel.

        Season the Fries: In a large mixing bowl, combine the sweet potato fries with olive oil, cornstarch, paprika, garlic powder, onion powder, sea salt, black pepper, and cayenne pepper (if using). Toss well to ensure each fry is coated evenly with the mixture.

          Spread on Baking Sheet: Arrange the fries in a single layer on the prepared baking sheet, ensuring they don’t touch each other. This allows them to crisp up nicely!

            Bake: Bake in the preheated oven for 25-30 minutes, turning the fries halfway through the cooking time. Keep an eye on them to avoid burning, as oven times can vary.
