2 medium zucchini, sliced into sticks (about 4-5 inches long)

½ cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

Salt and pepper, to taste

Olive oil spray (for baking)

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and optimal crispiness.

    Prepare Zucchini: Pat the zucchini sticks dry with a paper towel to remove excess moisture (this helps them become crispier).

      Set Up Coating Stations:

        - In one bowl, place the flour. Season with a pinch of salt and pepper.

          - In a second bowl, beat the eggs until mixed.

            - In a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, and a little more salt and pepper.

              Coat Zucchini:

                - Dredge each zucchini stick in the flour, shaking off the excess.
