2 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp black pepper

2 large eggs

¼ cup all-purpose flour

Salt, to taste

Fresh parsley, chopped (for garnish)

Prepare the Zucchini: Preheat your oven to 425°F (220°C). Wash and dry the zucchinis. Cut off the ends and slice each zucchini into quarters vertically, making long, fry-like pieces.

    Set Up the Breading Stations: In one shallow bowl, whisk together the eggs. In a second shallow bowl, mix the flour with a pinch of salt. In a third shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, and black pepper.

      Coat the Zucchini: Start by dredging each zucchini fry in the flour, shaking off any excess. Dip it into the whisked eggs, and finally roll it in the panko mixture, pressing gently to ensure the breadcrumbs stick well. Place the coated zucchini fries on a baking sheet lined with parchment paper.

        Bake the Fries: Once all zucchini fries are coated and arranged in a single layer on the baking sheet, spray them lightly with cooking spray or drizzle with olive oil.
